It's going to be denatured and destroyed in the stomach either way. Why would you care if some protein has activity prior to digestion? The question is not so much native conformation but availability, i.e. ability to undergo proteolytic reactions with native digestive enzymes, and amino acid content. There are indices online for this if you Google, but chances are if it's a dead animal, it's good shit. Whey is good shit too, in the same respect.
