from what i understand fruit some fruit have lower GI due to the fructose/glucose ration. higher fructose means lower GI as fructose goes to liver storage. tropical fruits have higher glucose than fructose ratios which mean higher GI.
oats are another source of starchy carb. the thiner the oats the higher the GI ratio. steel cut oats have the lowest GI were as instant or thinly rolled oats can get up to the high GI readings.

Starches aren't slow. In fact, starches can be faster than pure glucose, for example maltodextrin which is a starch.
Sugars are often lower in GI than starches, for example sucrose, lactose, and fructose are all lower than white bread or white potatoes. |
